Ingredients
- 1/4 cups onion, chopped
- 2 tbsp butter or margarine
- 2 tbsp vegetable oil
- 3 zucchini
- 2 cups tomatoes, chopped
- 1 can (20-ounces) hominy, drained
- 2 tbsp lime juice
- 1 tbsp chili powder
- 1 tsp alt
- 1 dash pepper

Step 1
Cut the zucchini into 1/2-inch pieces. cook and stir the onion in the butter and oil in a 10-inch skillet over medium heat until tender. Stir in the remaining ingredients and cook uncovered, stirring occasionally, until the zucchini is tender, about 10 to 15 minutes.
