2-Ingredient Slow Cooker Salsa Chicken


Get dinner on the table fast with this 2-ingredient recipe. All you need to do is place bone-less, skinless chicken thighs and some of your favorite salsa in your slow cooker in the morning and when you get home in the evening dinner is ready. This meal goes perfectly with quick-cook rice or instant mashed potatoes, so that you can feed the whole family in a pinch.

  • 9 lean skinless chicken thigh filets, about 1.5-pounds
  • 1 1/2 cups chunky salsa

Step 1

Place the chicken into your 4-quart slow cooker and top with the salsa. Cover and cook on low until the chicken is tender for about 4 to 6 hours. Once the chicken is completely cooked, remove the chicken and set on a large plate or cutting board. Allow to cool briefly so that you can handle it and shred with two forks.

Add the shredded chicken back into the crock pot with the pots juices. Season to taste with salt and pepper to taste.
