Skillet Summer Vegetables

Ingredients

  • 3 tablespoons vegetable oil
  • 3 cloves garlic, finely chopped
  • 1 onion, coarsely chopped
  • 3 tomatoes, seeded and coarsely chopped
  • 2 zucchini, sliced into rounds
  • 2 summer squash, sliced into rounds
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

What To Do:

In a large deep skillet over medium heat, heat oil; saute garlic and onion 3 minutes. Add tomatoes and continue cooking 5 minutes, or until tomatoes soften.

Add remaining ingredients and cook 10 to 15 more minutes, or until zucchini and squash are soft. Serve immediately.
