  • Chicken Marinade:
  • Chicken pieces
  • 1/2 cup orange juice
  • 1 TB honey
  • 1/8 tsp paprika
  • pinch of salt
  • (optional — the juice of1/2 a lemon or juice of 1 whole lime)



Step 1

Combine ingredients, repeating the recipe as needed to coat chicken pieces, refrigerating these in the marinade in covered non-metal container with tight-fitting lid—up to 24 hours before preparing. 8 hours for small servings of 4 to 6 pieces, but as long as 24 hours for 2 cut-up chicken fryers—about 15 pieces.

Broil Chicken:
Remove chicken pieces from marinade. Char-broil or flame broil, or in electric oven, placed skin-side up, 6" from broiler heat for 6 to 8 minutes. Cover chicken loosely in foil & bake about 30 minutes or til tender at 375F, testing thickest part of meat with knife to be certain it is done.
