  • 3 tbsp. canola oil
  • 1 packed cup grated zucchini (1 med. to lg. zucchini)
  • 1 large egg
  • 2-3 tbsp. minced onion
  • 1/4 cup grated sharp cheddar cheese
  • 1/3 cup seasoned breadcrumbs
  • 1/4 tsp. kosher salt
  • Black pepper to taste



Step 1

Grate zucchini into a clean dish towel and wring out moisture. Mix zucchini thru pepper, form into small balls, golfball size or smaller. Heat fry pan to medium, add canola oil. Place balls in frypan with oil and flatten slightly. Let brown on one side and flip to brown on the other. Flip carefully, they're still a bit loose. Remove from fry pan, place on paper towel to absorb extra oil. Serve with your choice of dip - I use a flavorful Marinara sauce. Makes about 15.
