Italian Style Pot Roast

Ingredients

  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 tsp dry basil
  • 1 tsp dry oregano
  • 1 boneless beef bottom round rump or chuck shoulder roast (around 3-4lbs)
  • 1 large onion, quartered and thinly sliced
  • 1 1/2 cups tomato basil or marinara pasta sauce
  • 2 cans cannellini or Great Northern beans, rinsed and drained.
  • 1/4 cup shredded fresh basil

Preparation

Step 1

1. Combine garlic, salt, basil, and oregano in small bowl, rub over roast

2. Place half of onion slices into slow cooker. Place roast over onion slices and top with remaining onion slices.

3. Pour past sauce over roast, Cover and cook on LOW 8-9 hours until roast is fork tender

4. Remove roast to cutting board and tent with foil.

5. Let liquid in slow cooker sit and skim off fat

6. Stir beans into liquid, Cover, cook on HIGH 15-30min or until beans are hot.

7. Carve roast across the grain into thin slices. Serve topped with beans, gravy and fresh basil.
