Green Bean Fries~THM-S

Adapted from recipe in both Trim Healthy Mama Cookbooks. Definitely a family favorite! We love pairing this with THM Cheeseburger Pie.

Ingredients

  • 2 16-oz bags frozen extra fine green beans
  • 3-4 Tbsp butter or coconut oil (melted)
  • mineral salt
  • black pepper
  • garlic powder (not in original recipe)
  • cayenne pepper to taste (optional- we omit)
  • 2 Tbsp nutritional yeast (we omit)
  • 2-3 Tbsp finely grated Parmesan cheese (optional- omit for dairy-free)

Preparation

Step 1

1. Preheat oven to 375 F.
2. Empty the bags of beans onto two 9 x 13-inch baking sheets (or we use our industrial size baking pan). Divide the coconut oil/butter and seasonings between the two trays. Toss the beans with your hands so each green bean gets glazed with oil and coated with seasonings. (**we like it best with very generous amounts of seasonings!)
3. Bake for 25-35 minutes (we prefer 45-60 minutes), turning the beans once or twice during cooking, until they are tender and slightly shriveled. They'll be ready when they look crispy in places and have lost their "purtiness"! You can broil at the end for a couple of minutes for an extra crisp result if desired, but keep a watch that they don't burn.

Dairy-free if using coconut oil instead of butter and omitting the cheese.
