Tomato Cassarole

Ingredients
- Olive oil
- French bread
- 16 plum tomatoes
- minced garlic
- 2 tbsp. sugar
- 2 tsp. kosher salt
- Ground black pepper
- 1/2 juliened basil leaves
- 1 cup fresh parmesan cheese

Preparation
Step 1
Preheat oven to 350.
Heat 3 tablespoons olive oil in large saute pan (over medium heat). Add bread cubes and stir to coat. Cook for 5 minutes stirring often until evenly browned.
Combine tomatoes, garlic, sugar, salt and pepper in large bowl. Add this mix to bread and continue to cook for 5 minutes (stirring constantly). Pour into baking dish and sprinkle with parmesan cheese and 2 tablespoons of olive oil.
Bake for 35-40 minutes.
