BARBECUED BEEF Shortcuts with Style

FOR A ROAST that practically falls apart at the touch of the fork, try this recipe/technique. The more lean the meat, of course the more tender, but you don't have to stick with the traditional cuts of English, Round Bone or Chuck Roasts. You might have less waste and shrinkage if you were to select a medium priced cut of beef, such as Heel of Boneless Round, or Sirloin. Peeled, cut up fresh carrots and peeled quartered, large baking potatoes can be arranged around the meat for the last hours of the roasting time.

Ingredients

  • FALL APART BEEF ROAST:
  • 3-5 3-5 3-5 lb beef roast
  • 1/4 1/4 1/4 cup oil
  • 2 2 to tsp seasoned salt (or to taste)
  • 1 2 3 envelope of onion soup mix, if you wish, or cut up 2 or 3 white crisp onions, each about the size of an orange and place around the roast about halfway through the baking time.
  • 4 to 6 to to 3 that will keep if refrigerated & tightly covered, up to a week OR freeze the leftovers to be used within 3 months.

Step 1

BARBECUE SAUCE:
Prepare the Fall Apart Beef Roast and refrigerate it overnight, before preparing the Barbecued Beef from part of it. The refrigeration will help to tenderize the beef.

Cut lean pieces of the chilled roast into 1 to 1 1/2 inch chunks and then shred these pieces into strands of beef, using 2 forks to separate the grain this way.

When you have 4 cups of shredded beef, transfer to a large skillet. Add 2 cups water & bring to boil, simmering gently uncovered, 10 minutes, stirring frequently. Turn heat to low and stir in 1 cup each: bottled apple butter, Catalina Dressing, and Ketchup. Stir to combine ingredients. Cover with a lid and allow to cook gently on lowest heat about an hour. Stir once in awhile.

Serve the beef mixture spooned into split hamburger or onion rolls.

Serves 4 to 6.


EXTRA SPICY BBQ BEEF:
When you stir in the 3 sauce ingredients, also add 1/4 cup of Heinz 57 Sauce, 1 TB Worcestershire, 1 TB A-1 Sauce, 2 TB brown sugar. Heat gently as directed in above recipe.


BARBECUED BEEF SAUCE:
Another good sauce recipe to use instead of the basic 3 ingredients listed above, is to add 1 pint of bottled barbecue sauce (like Open Pit) plus 8-oz can jellied cranberry sauce, well-mashed with fork, plus 1/4 cup packed light brown sugar, & 2 TB vinegar. Heat gently as otherwise directed in recipe given above.

Freeze sauce in small portions to thaw & rewarm with.
