Ingredients
- 1/2 cup frozen pineapple chunks
- 1 big scoop (about 1/3 cup) Coconut Dairy Free Coconut Milk Ice Cream (I use So Delicious!)
- 1/4 cup pineapple juice
- 1 1/2 ounces (3 tablespoons) gold rum

Instructions
Place all of the ingredients in your blender and puree until relatively smooth. We like the wee little bits of coconut and pineapple that can remain.
Pour into a glass, and garnish with fresh pineapple and/or maraschino cherries, if desired.
