Lemon Velvet Cake

  • 1 Pkg. Lemon Cake Mix
  • 1 Cup Water
  • 1/2 tsp. Lemon Extract
  • 1 (3 oz. pkg.) Lemon Jello
  • 3/4 Cup Vegetable Oil
  • 3 Large Eggs
  • 2 Cups Powdered Sugar
  • 1 Tbs. Lemon Zest
  • 1/2 Cup Fresh Lemon Juice
  • Garnish with Sweetened Whipped Cream



Step 1

Preheat oven to 350 Degrees. Lightly grease and flour a 9 x 13 inch baking pan; set aside. In a large bowl combine cake mix, 1 Cup Water, lemon extract, lemon jello, oil and eggs. Beat at medium speed with electric mixer for at least 3 minutes. Spread batter into prepared pan. Bake for approximately 35 minutes. When cake is done, prick entire cake with a fork. Mix powdered sugar with lemon zest and juice. Pour mixture on top of warm cake. Garnish with whipped cream to serve if desired.
