Ingredients
- 2 tbsp (25 mL) vegetable oil
- 1 cup (250 mL) chopped onion
- 1/8 tsp (0.5 mL) red pepper flakes
- 1 tsp (5 mL) chopped garlic
- 1 tbsp (15 mL) finely chopped ginger
- 1 large mango, peeled and diced
- 2 tbsp (25 mL) granulated sugar
- 2 tbsp (25 mL) white vinegar
- 1 tbsp (15 mL)soy sauce
- 2 tbsp (25 mL) chopped coriander
- 2 tbsp (25 mL) lemon juice
- Salt and freshly ground pepper
Preparation
Step 1
Heat oil in a pot over medium heat. Add onion and red pepper flakes and sauté for 3 minutes or until softened. Stir in garlic and ginger and cook for 30 seconds.
2. Add mango and cook until slightly softened. Stir in sugar, vinegar and soy sauce and cook until mixture thickens, about 5 minutes.
3. Remove from heat and stir in coriander, lemon juice, salt and pepper. Cool.
