Preparation

Step 1

1. For the gravy, cook bacon in a large saute pan over medium heat until crisp. Transfer bacon to a paper-towel lined plate and drain all but 2 T. drippings
2. Whisk flour into drippings until combined; cook 1 minute. Slowly whisk in milk, maple syrup, and cayenne. Bring gravy to a simmer and cook 2-3 minutes. Add bacon to gravy and season with salt and pepper; keep warm
3 Preheat grill to medium-high. Brush grill grate with oil.
4.Pulse pork and sausage in a food processor just until combined. Divide meat into 4 portions, shape into 1/2 inch thick patties, season with salt and pepper, and coat with nonstick spray
5. Grill burgers, covered, to well done, 4 minutes per side. Remove burgers from grill, tent with foil, and let rest 5 minutes.
6. Place each burger on a bottom biscuit; top with gravy, crispy crowns, an egg, and a top biscuit
