Ingredients
- Dry beans,any type preferred
- Ham (either ham hocks of bone of full ham)
- Parsley,to taste
- Celery seed,to taste
- Black pepper,to taste
- Carrots
- Celery
- Onions
- Potatoes
Preparation
Step 1
Rinse beans and remove any stones.
Put beans in pot and fill with water to cover beans by about 2 inches. Bring to a boil and let boil for 5 minutes. Remove from heat and let sit for 2 hours.
Drain beans. Place beans back into pot with rinsed ham hocks or ham bone. Add ham slice or another ham hock. in a food processor,process carrots,celery and onions until chopped but not turned into a paste. Add vegetables to ham and beans. Cover with water and bring to a boil,reduce heat and simmer at least 1-1/2 hours (tasting beans to see if it needs longer). Cube potatoes to desired size and put in soup while simmering to soften the potatoes and thicken the soup.
