  • Nonstick cooking spray
  • 1 pound orange roughy fillets
  • 1 Tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/8 to 1/4 teaspoon ground cayenne pepper
  • 2 Tablespoons pecans, finely chopped
  • 2 Tablespoons grated parmesan cheese
  • 1 Tablespoon dry bread crumbs

Step 1

Preheat the oven to 425 degrees. Coat a shallow baking pan with vegetable oil cooking spray; place the fish fillets in the pan. In a small bowl, combine the olive oil, lemon juice, paprika, garlic powder, onion powder, black pepper, salt, white pepper and cayenne pepper. Spoon or brush half the mixture oven the fish. To the remaining oil mixture, add the pecans, parmesan cheese and bread crumbs; mix well. Spoon the mixture onto the fish and spread it evenly. Bake 10 to 15 minutes (depending on thickness of the fish) or until the fish flakes easily with a fork.
