French Onion Soup

  • 4 lg onions
  • 2 tbsp butter
  • 2 tbsp all purpose flour
  • 4 c. water
  • 2 veggie bouillon cubes
  • 1/2 tsp salt
  • Dash pepper
  • 2/3 c. white wine
  • 4 slices French bread
  • 3/4 c. grated cheddar
  • 1 herb bouquet (1 parsley, 1 thyme and 1 bay leaf)

Step 1

Peel and slice onions. Saute in skillet with butter over low heat. Sprinkle with flour. Add water, stirring constantly. Crumble bouillon and add to pan. Add salt, pepper and herb bouquet - bring to boil. Cover and cook 20 minutes. Add wine. Put soup in bowls, please bread and cheese on top. Heat oven to 450 degrees and bake for 10 mins.
