Heirloom Tomatoes in Puff Pastry

  • 2

    sheets puff pastry, thawed

  • mayonnaise

  • shredded cheddar or goat cheese

  • heirloom tomatoes

  • salt

  • pepper

  • basil


1. Preheat oven to 400. Unfold puff pastry sheet and spread with mayonnaise. Sprinkle with salt and pepper. Cut into thirds one way, and then cut into thirds the other to make 9 squares. 2. Repeat with the other puff pastry sheet 3. Press each square into the cup of a muffin pan (ungreased)and top with a generous sprinkling of the cheese of your choice. 4. Top with 3 or 4 small tomatoes, and bake for about 20 minutes until hot, puffed, and golden brown. Remove from the oven and top with fresh julienned basil
