Ingredients
- 4 tbsp. butter, softened
- 4 oz. sharp process American cheese, shredded (1 cup)
- 1/2 cup dairy sour cream
- 1 tbsp. sliced green onion
- 5 or 6 medium baking potatoes
Preparation
Step 1
Have first four ingredients at room temperature. Whip together butter and cheese with electric beater till light and fluffy. Stir in sour cream and onion. Scrub potatoes, (For crunchy skins, bake as is; for soft skins, rub with a little cooking oil) Wrap each in a square of foil. Bake 45 minutes to 1 hour on grill, or directly on the hot coals or oven. When potatoes are done, roll gently under hand to make mealy inside. Cut crisscross in top of each potato, cutting through foil. Turn back points of foil. Push in ends of potato to fluff; top with cheese mixture. If desired, sprinkle with additional sliced green onion.
