Gruyere Chicken

Ingredients

  • 4 boneless skinless chicken breast halves
  • flour, for dusting
  • 2 tablespoons olive oil
  • 3 green onion, sliced
  • 1/2 cup whipped cream
  • 1 tablespoon brandy
  • 3/4 cup shredded Gruyere or Swiss cheese

Preparation

Step 1

Flatten the chicken breasts with the palm of you hand until they are 1/2-inch thick. Dust with flour, shaking off any excess. Heat the oil in a skillet; add the chicken and cook for 4 - 5 minutes on each side, or until golden brown. Transfer to a baking sheet lined with parchment paper, then cover with foil.

Add green onions to the skillet and cook for 2 mintues, until soft. Add cream and brandy and bring to a boil. Reduce the heat and simmer for 1 minutes, or until the sauce reduces slightly. Season with salt and freshly ground black pepper.

Spoon the sauce over the chicken and top with cheese. Place under a hot broiler until the cheese melts and begins to brown.
