  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 nutmeg
  • 1/2 teaspoon ground ginger
  • 1-1/2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1/2 cup crushed pineapple
  • 1/2 cup unsweetened applesauce
  • 3 cups finely grated peeled carrots
  • 1 cup u, chopped
  • Cream Cheese Frostings
  • 1 pound cream cheese, room temperature
  • 5 ounces butter, softened
  • 1/2 cup sour cream
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla
  • 1 tablespoon orange juice
  • 1/8 teaspoon salt



Step 1

Preheat oven to 325. Lightly grease 3 cake pans with butter. Line bottom with parchment paper.

In medium bowl. combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Whisk well until blended.

In a bowl with a stand mixer , beat the sugar and oil until well blended. Add eggs one at a time , beating after each addition. Add applesauce and pineapple beating to mix. Add flour mixture, and beat to incorporate, scraping down the sides of the bowl with rubber spatula. Add the carrots and the walnuts, and beat briefly.

Divide the batter evenly between prepared pans. Bake cake until cake begins to pull away. Bake for 35-45 minutes. Cool the cakes on wire racks.

Mix frostings with the above ingredients. Mix real well.
