Ingredients
- 1 1/2 cup blanched almonds
- (can substitute 1 1/2 cup Trader Joe's
- pure almond flour)
- 3/4 cup powdered sugar
- 4 egg whites
- 1/4 teaspoon salt
- 2 tablespoons powdered sugar
- 3/4 teaspoon almond extract
- * additional sliced almonds for pan
Preparation
Step 1
1. Grind 1 1/2 cups of blanched
sliced almonds with 3/4 cup
powdered sugar until consistency
of corn meal;
Or mix Trader Joe"s pure almond
flour with powdered sugar
2. Beat 4 egg whites into soft peaks.
Add salt, 2 tablepoons powdered
sugar and almond extract.
3. Fold 1/2 of almond/powdered sugar
mixture into egg whites. Fold
last half.
4. Butter 8 inch cake pan and
cover with sliced almonds.
5. Spoon batter into pan and
spread evenly
6. Bake 35-40 minutes in 325 degree
oven.
