- 2-lb boneless, skinless chicken thighs or breasts
- 12-ounce bag of frozen peach slices
- 1 red onion, sliced
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon freshly grated ginger
- 2 teaspoons ground coriander
