Ingredients
- Ginger soy dressing:
- 3 cups shredded cooked chicken
- 4 green onions chopped
- 1 red bell pepper cut into julienne strips
- 3 cups mixed torn lettuce leaves
- 1 cup snow peas, trimmed and microwaved on high for 1 minute
- 12 flour tortillas (6 inch) warmed
- ginger soy dressing
- chopped fresh cilantro
- 1/4 cup soy sauce
- 1/2 cup rice wine vinegar
- 3/4 cup vegetable oil
- 1/3 cup sugar
- 2 tablespoons sesame oil
- 1/4 cup sesame seeds
- 1 tablespoon grated ginger root
- In a glass bowl, whisk ingredients until emulsified. Refrigerate up to 2 weeks. Remove dressing from refrigerator, shake well.
Preparation
Step 1
Combine all ingredients except tortillas, ginger dressing and cilantro in a large bowl. Warm tortillas in the microwave. When ready to serve, toss salad with ginger dressing. Place 1/2 cup salad into each tortilla. Garnish with chopped cilantro.
