Three Pea Gorgonzola Salad

Ingredients

  • 1 tablespoon shallot, finely minced
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon creme fraiche
  • 1/2 cup gorgonzola cheese, crumbled
  • 1/4 cup olive oil
  • salt and freshly ground black pepper
  • 1/2 pound sugar snap peas
  • 1/2 pound snow peas
  • 1 bag frozen petite peas, 10-ounces, (about 2 cups)

Preparation

Step 1

Bring a large pot of water to a boil.
Meanwhile, in a medium bowl, combine shallot, vinegar, crème fraiche, salt and pepper. Whisk in olive oil.
Add the sugar snap peas and snow peas in batches to the boiling water; blanch for 15 seconds. Add the frozen petite peas to the boiling water for 10 seconds. . Drain in colander and rinse with cold water. Lay absorbent paper towels on counter and dry all peas thoroughly.
In a large bowl, combine peas with dressing, then add crumbled gorgonzola.
