Ingredients
- 1 tablespoon butter
- 1 pound chicken meat, diced
- 2 slices bacon, finely chopped
- 1 small onion, finely chopped
- 1 cup rice
- 1/2 cup dry white wine
- 2 1/4 cups chicken stock
- 1/2 teaspoon dried thyme
- 1/2 teaspoon chili powder
- 1/2 teaspoon turmeric
- salt and pepper
Preparation
Step 1
Melt butter in a large casserole dish and fry chicken and bacon quickly over high heat until cooked. Remove with slotted spoon and keep warm.
Add onion to dish and fry over medium heat until softened.
Add rice and cook, stirring all the time until rice looks transparent.
Pour in wine, increase heat and boil rapidly until wine has reduced by half.
Stir in stock, herbs and seasonings. Bring to boil, reduce heat to low, cover and simmer for 15-20 mintues until rice is tender and liquid is absorbed. Stir in chicken and bacon and serve.
