Chicken Adado

Ingredients

  • 2 cups olive oil
  • 2 cups vinegar
  • 1 cup dry white wine
  • 1 tablespoon snipped parsley
  • 1 tablespoon salt
  • 2 teaspoons oregano
  • 1 teaspoon red pepper flakes
  • 1 teaspoon thyme
  • 1 clove garlic, minced
  • 2 broiler or fryer chickens, about 2 pounds each, split in half

Preparation

Step 1

Combine all ingredients except chicken; nix well in saucepan; heat to boiling.

Coat chicken halves with sauce, place on grill over hot coals.

Baste frequently with hot sauce and turn several times so that chicken cooks evenly on both sides. Cook until done, about 1 1/4 hours.
