Thai Chicken with Vermicelli

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless chicken breast, cubed
  • 1 10 ounce can chicken broth
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1/4 cup peanut butter
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 2 green onion, sliced
  • 2 cloves garlic, minced
  • 375 grams capelli d'angelo, vermicelli, or fine egg noodles
  • 1 tablespoon chopped fresh parsley

Preparation

Step 1

In skillet heat oil; saute chicken until golden. Remove chicken and set aside, keeping warm.

In clean skillet, combine broth, honey, and say sauce; whisk in peanut butter, cornstarch and ginger. Add onion and garlic, cook stirring constantly over low heat until blended and smooth.

Cook pasta. Stir chicken mixture over and serve topped with parsley.
