Ingredients
- 3 c shelled fresh fava beans or 1 lb frozen fava beans
- 2 T EVOO
- 1 small fennel bulb, diced
- 2 garlic cloves, minced
- 3/4 t salt
- 6 scallions (about 1 bunch), thinly sliced
- 1/2 c coarsely chopped cilantro
Preparation
Step 1
1. Bring a lg saucepan of salted water to a boil & add fava beans. Cook for 2 minutes.
2. Drain & immediately cool under cold running water. If using fresh fava beans, use your fingernails to puncture the tough outer skin surrounding each bean, then pinch them gently to slip off the skins.
3. In a lg skillet, heat oil over medium heat. Add fennel & garlic & cook until softened, 4-5 minutes. Add favas & salt & cook until heated through.
4. Remove from the heat & stir in scallions & vinegar.
5. Serve warm or room temperature, tossed with cilantro before serving.
