Ingredients
- 2 Lbs. Chicken Breasts
- 6 Medium/Small Potatoes
- 1/3 Cup Olive Oil
- 1 1/2 Tsp. Salt
- 1 Tbs. Ground Pepper
- 1 Tbs. Paprika
- 2 Tbs. Garlic Powder
- 3 Tbs. Hot Sauce (I use Cholula)
- {Topping}
- 2 Cups Shredded Cheese
- 1 Cup Bacon Bits
- 1 Cup Diced Green Onion
- Sour Cream (Optional)

Preparation
Step 1
Preheat oven to 500F
In a large bowl mix Olive Oil, Salt, Pepper, Paprika, Garlic Powder & Hot Sauce.
Cube the potatoes & add to the bowl and mix to coat.
Coat a 9x13 dish with cooking spray and add potatoes. Allow for excess sauce in the bowl.
Bake the potatoes for 45 minutes stirring every 15 minutes. Potatoes should be cooked but not mushy.
Cube the chicken & add it to the bowl with the leftover sauce.
Mix together Cheese, Bacon and Green Onions in a separate bowl.
Once potatoes are done, mix in the chicken and layer the topping over it.
Bake for 15 minutes or until chicken is cooked
Serve with sour cream (optional)
