Ingredients
- Topping:
- 2 c all purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 2/3 c butter softened
- 1 c sugar
- 3 large eggs
- 2/3 c milk
- 3 medium carrots, grated
- 1/2 c chopped walnuts
- Icing
- 1/2 c butter, softened
- 4 oz cream cheese, softened
- 1 tsp vanilla extract
- 2 1/2 c powdered sugar
- 1/4 c walnuts, finely chopped
- 2 tbs firmly packed brown sugar
Preparation
Step 1
Grease and flour a 9 inch cake pan.
Mix dry ingredients. Beat butter and eggs until fluffy. Add eggs one at a time. Gradually add flour mix and milk alternately. Stir in carrots and nuts. Pour into pan. Bake at 350* for 40 minutes. Cool.
For icing, bet butter and cream cheese until smooth. Add vanilla and powdered sugar.
For topping, mix nuts and brown sugar.
Place cake on serving plate. Spread icing over top and sides of cake. Sprinkle top with nut mix.
