Ingredients
- 2 bone-in, skinless chicken quarters
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 Tbsp olive oil
- 1 cup reduced-sodium chicken broth
- 1 (5.8-oz) pkg wheat couscous with roasted
- garlic and olive oil
- 1/4 cup sliced almonds, toasted
- 1 green onion, chopped
- 1 lemon

Preparation
Step 1
Preheat oven to 350°F. Sprinkle chicken with
salt, pepper, cumin and turmeric. Heat oil in a
Dutch oven over medium-high heat; brown
chicken, in batches, 3 minutes per side. Add
broth to chicken in Dutch
oven; transfer to oven. Bake 20 minutes or until
chicken is done.

Prepare couscous according to package
directions; stir in almonds and green onion.
Grate rind from lemon to equal ½ tsp; squeeze
juice from lemon to equal 1½ tsp. Add lemon
rind and juice to couscous; fluff with a fork.
