Bacon and Cream Cheesed Stuffed Mushroms

Ingredients

  • 1 lb. whole mushrooms
  • 6 slices bacon
  • 3 green onions chopped
  • 1/4 c diced red bell pepper
  • 1 garlic clove minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper 3 oz. cream cheese
  • 1/2 c cheddar cheese shredded
  • 2 T Italian bread crumbs
  • 1 tsp olive oil

Step 1

Preheat oven to 375 degrees.

Clean mushrooms and remove stems. Chop stems. In skillet cook bacon until almost crisp. Stir in onions, red pepper, garlic and mushroom stems. Cook until tender and stir in salt and pepper. Transfer to bowl and cool.

Stir cream cheese and cheddar cheese together until blended and add bacon mixture. Spoon this mixture into mushroom caps and place in a lightly oiled baking dish.

In another small owl combine bread crumb and olive oil.. Sprinkle over mushrooms and bake 20-25 minutes or until mushrooms are tender and bread crumbs are golden.
