Sausage and Cornbread Breakfast Skillet

Ingredients
- 1 tube sausage
- 1 green pepper (chopped)
- 1 onion (chopped)
- 4 eggs
- 1 1/4 c milk
- 1 corn muffin mix
- 1/4 c drained jalapeno peppers
- 2 c cheddar cheese

Preparation
Step 1
In 12 inch cast iron skillet, cook sausage. When cooked add green pepper and onion and cook 5 more minutes. Drain and remove from heat.
In bowl, combine eggs, milk, and stir in muffin mix and jalapeno peppers. Pour over sausage. Return to heat, cover and cook 10 minutes. Remove from heat and let stand 5 minutes. Sprinkle with cheese and serve with salsa or syrup.
