Homestyle Mac 'n Cheese, Broccoli and Carrot Medley

Ingredients
- 8 oz whole-grain elbow macaroni
- 3 Tbsp butter, divided
- 2 Tbsp whole wheat flour
- 2 cups reduced-fat 2% milk
- 1 cup shredded sharp Cheddar cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- 3/4 cup whole wheat panko breadcrumbs
- 2 Tbsp freshly grated Parmesan cheese
- 1/2 lb broccoli, cut into florets
- 2 carrots, peeled and sliced
- 1/2 cup organic vegetable broth
- 1 Tbsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper

Step 1
Preheat oven to 350°F. Cook pasta
according to package directions. Melt 2 Tbsp
butter in a saucepan over medium heat. Whisk
in flour; cook, stirring constantly, 1
minute. Gradually whisk in milk, stirring
constantly, 3 to 5 minutes or until thickened. Stir
in Cheddar cheese, salt and pepper until
smooth; add pasta. Melt remaining 1 Tbsp
butter in microwave at High 15
seconds. Combine melted butter, panko and
Parmesan cheese. Pour pasta mixture into a
greased 11- x 7-inch baking dish; top with
panko mixture. Bake 30 to 35 minutes or until
top is golden.

Combine all ingredients in a medium
saucepan over medium-high heat. Bring to a
boil. Reduce heat and simmer, covered, 7
minutes or until vegetables are tender.
