Norwegian Pound Cake
Received this recipe from my Niece, Amy Marie Clark Hutchison. She said it is the most delicious cake you have ever eaten.
You will need a 9x13 greased pan.
- 2 C. All Purpose Flour
- 2 C. White Sugar
- 2 t. Baking Soda
- 1/4 t. Salt
- 2 Eggs
- 20 oz. can Crushed Pineapple (DO NOT DRAIN)
- 1 t.Vanilla
- 1/2 C. Chopped Pecans
- Icing Ingredients
- 8 oz. Cream Cheese
- 4 T. Butter
- 3 C. Powdered Sugar
- 1 t. Vanilla
1. Mix all ingredients together with and electric mixer until smooth.
Pour into the 9x13 greased Pan and Bake @ 350 degrees for 25 to 30 minutes or until toothpick inserted in the center of the Cake comes out clean.
2. While it is cooling, mix up the icing. Put all icing ingredients into a bowl and mix with and electric mixer until creamy. Do not ice the Cake until completely cool.
3. When you ice the Cake, you can put Pineapple Chunks or Pecans on the top. Or maybe you have a different idea.
