Puff Pancake

One of my favorite (and fast) breakfast dishes! Heather likes it with strawberries - Beth likes it with lemon juice & powdered sugar - Papa Billy likes it with maple syrup ... very light!

Ingredients
- Toppings:
- 1/4 c. butter
- 3 eggs
- 1 c. milk
- 1/4 c. sugar
- 1 c. flour
- sliced strawberries
- warm apple or cherry pie filling
- lemon juice & powdered sugar
- maple syrup
Preparation
Step 1
Melt butter in 9x13" pyrex pan (or round cast iron skillet). Mix eggs and milk together; add remaining ingredients. Mix lightly. Pour into prepared pan. Bake at 375 for 20 min. It will "puff" up, but may collapse when you take it out of the oven
