Grilled Pineapple with Mint Sugar
- 3 TB sugar
- 2 TB chopped fresh mint leaves
- 3/4 tsp grated lime rind
- 1 Medium pineapple - peeled, cored, cut in 12 wedges
- cooking spray
- 1 TB melted butter
Preheat grill or grill pan to medium high.
Combine sugar, mint and rind in mini food processor and process until mint is finely ground. Should resemble damp green sand.
Arrange pineapple on grill grates coated with cooking spray; cook 3-4 minutes on each side or until well marked.
Arrange pineapple on platter and drizzle evenly with butter.
Sprinkly sugar mixture
Let stand 2 minutes before serving
