Ingredients
- 1/2 lb uncured smoked sausage, cut into 1/2-inch
- pieces
- 4 small organic red potatoes
- 2 ears fresh corn, husked and cut in half
- 1/2 sweet onion, quartered
- 1 lemon, halved
- 3 cups water
- 1 Tbsp Old Bay seasoning
- 1 bay leaf
- 1/2 lb wild-caught fresh or frozen unpeeled
- shrimp
- 2 tomatoes, cut into wedges
- 1 small organic cucumber, peeled and cut into
- chunks
- 1 1/2 Tbsp basil pesto
- 1 1/2 tsp olive oil
- 1 tsp white wine vinegar

Preparation
Step 1
Combine sausage, potatoes, corn, onion,
lemon and water in a Dutch oven. Stir in Old
Bay seasoning and bay leaf. Bring to a boil.
Reduce heat, and simmer 10 minutes or until
corn and potatoes are tender. Add shrimp; cook
2 minutes or until shrimp are pink and firm.
Drain and serve on a platter.

Combine tomatoes and cucumber in a
serving bowl. Whisk together remaining
ingredients. Pour dressing over tomato mixture,
and toss.
