Ingredients

    lb uncured smoked sausage, cut into 1/2-inch

    small organic red potatoes

    ears fresh corn, husked and cut in half

  • 1/2

    sweet onion, quartered

  • 1

    lemon, halved

  • 3

    cups water

  • 1

    Tbsp Old Bay seasoning

    bay leaf

  • 1/2

    lb wild-caught fresh or frozen unpeeled

  • shrimp

    tomatoes, cut into wedges

    small organic cucumber, peeled and cut into

  • chunks

    Tbsp basil pesto

    tsp olive oil

  • 1

    tsp white wine vinegar

Directions

Combine sausage, potatoes, corn, onion, lemon and water in a Dutch oven. Stir in Old Bay seasoning and bay leaf. Bring to a boil. Reduce heat, and simmer 10 minutes or until corn and potatoes are tender. Add shrimp; cook 2 minutes or until shrimp are pink and firm. Drain and serve on a platter. --------------------------------------------------------------------------------- Combine tomatoes and cucumber in a serving bowl. Whisk together remaining ingredients. Pour dressing over tomato mixture, and toss.
