Thai Thigh Chicken

Using the ginger in tubes from the grocery store makes this recipe even easier!
Cook in oven at 325.

Ingredients
- 2 Tbsp vegetable oil
- 2 lbs chicken thighs(boneless skinless)
- 1 medium onion
- 1 clove garlic, minced
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp salt
- 2 tsp fresh ginger
- 2-3 tsp sweet hot chili sauce
- 2 Tbsp soy sauce
- 2 Tbsp peanut butter
- 1 tsp lime zest
- 1 lime, juiced
- 1 can coconut milk
Preparation
Step 1
In dutch oven heat oil and brown chicken about 15 minutes. Set aside. Saute onion and garlic, cook until tender. Stir in coriander, cumin, salt, ginger, chili sauce, soy sauce and peanut butter. Add coconut milk and stir to blend. Pour over chicken.
Cook for 1 hour at 325. Just before serving stir in lime zest and lime juice.
Serve over Basmati rice or orzo pasta.
