3 Speedy Refrigerator Side Salads

Y'all know I keep glass bowls of side salads in the refrigerator: for snacking, and easy prep for lunch & dinner. The Tomato/Cucumber/Onion Salad is a favorite of Beth's ... Papa Billy likes the Japanese Cucumbers alot ... and the Bean Salad is so easy to add to, and works as a great "pot-luck" dish too

Ingredients

  • Tomato/Cucumber/Onion:
  • 2 tomatoes, chopped
  • 1 hot house (English) cucumber
  • 1/2 onion, chopped
  • chopped bell pepper (optional)
  • Any vignarette/Italian dressing, but I like Gerard's Champagne dressing best
  • ** ** **
  • Japanese Cucumber Dill Salad
  • 1 hot house (English) cucumber
  • white vinegar
  • sugar
  • dried dillweed
  • light olive oil
  • ** ** **
  • Bean Salad
  • at least 4 kinds of canned beans (1 can each): kidney, garbanzo, green, wax, Northern, etc. - drained
  • 1/2 onion, chopped
  • 1/4 c. chopped cilantro
  • 1 bottle good Italian dressing

Preparation

Step 1

Basically, you just mix everything together and chill!!

Tomato/Cucumber/Onion Salad: You can use a Greek Vignarette dressing and add feta cheese

Japanese Cucumber: Whisk dressing ingredients together. You can add a dash of ground ginger too. Pour over cucumbers and let them marinate in refrigerator.

Bean Salad: This keeps for WEEKS! Just keep adding another can of another bean as it depletes...
