Mango Bread Muffins

Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cube (1/2 c.) butter, melted
  • 1/4 cup oil
  • 1/2 cup raisins
  • 4 cups chopped mangoes

Preparation

Step 1

Combine flour, baking soda, sugar, and cinnamon. Set aside.

Combine eggs, vanilla extract, butter, and oil in a separate bowl.

Add your dry ingredients to your wet ingredients and mix well.

Fold in mangoes and raisins.

Fill lined muffin pan with batter (about 3/4 full).

Bake at 350 degrees for about 25 minutes.

Yields 22 muffins.
