Ingredients
- 4 (10-inch) whole wheat tortillas, warmed
- 1/2 pound thinly sliced smoked turkey, preferably peppered
- 8 slices bacon, chopped and cooked
- 1 cup fresh baby spinach
- 1 cup diced Haas avocado
- 1 cup diced roasted red bell pepper
- 3 Tbsp. chopped fresh flat-leaf parsley
- 1 tsp. freshly squeezed lime juice
- Kosher salt and freshly ground black pepper
Preparation
Step 1
To assemble the wraps, place the tortillas in a row. Place a quarter of the turkey, bacon, spinach, avocado, red pepper, and parsley along the bottom half of each tortilla. Sprinkle some lime juice over each, and season with salt and pepper. Fold the sides of each tortilla slightly over the filling toward the center. Fold the bottom edge toward the center, away from you, then roll gently until the tortilla is completely wrapped around the filling.
