Ingredients
- For the fried llengüeta:
- 4 oz fresh llengüeta
- 1 oz plain flour
- 2 cups 0.4º olive oil
- salt
- For the paper cornets:
- 10 sheets sugar paper (51/2 x 51/2")
Preparation
Step 1
For the fried llengüeta:
1. Heat the olive oil over medium heat (300ºF).
2. Lightly flour the llengüeta and plunge into the oil. The oil has to be kept over a medium heat until the fish is totally dehydrated and crispy.
3. Drain and spread over kitchen paper. Season with salt.
For the paper cornets:
1. Fold the paper down one side to make a cornet.
Final Steps & Preparation:
1. Fill the cornets with the fried fish and place them in a holder that allows them to be served vertically.
