Horchata and Tiger Nut Pipette

Ingredients

  • For the horchata:
  • 2 cups tiger nuts
  • 13/4 cup water
  • For the hydrated tiger nuts:
  • 10 large tiger nuts
  • To finish:
  • 10 pipettes

Preparation

Step 1

For the horchata:
1. Re-hydrate the tiger nuts by covering them with 1¼" of water. Leave to soak for 12 hours.
2. Drain the tiger nuts and grind them in the food processor until you get a fine powder.
3. Cover the ground nuts with 1¾ cup of water and leave to soak for 12 h.
4. Liquefy the purée and repeat with the surplus pulp. Strain the liquid and keep in the fridge.

For the hydrated tiger nuts:
1. Hydrate the tiger nuts by covering them with ¾" of water. Leave to soak for 8 hours.
2. Drain and made a 1/10" diameter hole in each tiger nut.

Final Steps & Preparation:
1. Fill the pipettes with the liquefied horchata
2. Stick a hydrated tiger nut on each pipette.
3. Serve really cold.
