Golden Rice Casserole

Ingredients

  • 3 cups cooked rice
  • 2 cups (1 lb. can) tomatoes, drained
  • 1 3 oz. can sliced mushrooms, drained
  • 2 tbsp. chopped green pepper
  • 2 tbsp. chopped onion
  • Salt and pepper
  • 1/2 lb. pasteurized process cheese spread, sliced
  • 2 hard-cooked eggs, cut in wedges
  • parsley

Preparation

Step 1

Combine rice, tomatoes, mushrooms, green pepper, onion and seasonings. Alternate layers of rice mixture and cheese in 1 1/2 quart casserole dish. Bake at 350 degrees for 30 minutes. Garnish with egg wedges and parsley. Serves 6-8
