Zucchini Bread (Linda's Butterscotch Version)

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 tsp vanilla
  • 2 cups sugar
  • 2 cups grated zucchini
  • 1 tsp baking soda
  • 1/2 baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 2 cups all purpose flour
  • 1/2 cup oatmeal
  • 1 pkg (4 serving size) instant butterscotch pudding
  • 1 cup chopped nuts

Preparation

Step 1

Beat eggs, add oil, vanilla, sugar and zucchini and mix together. Add dry ingredients, mix well. Stir in nuts. Pour into two greased and floured loaf pans. Bake at 350 degrees for 1 hour. Cool and refrigerate.
