Ingredients
- 1 tablespoon soy sauce
- 1/4 tablespoon hot Chinese mustard
- 1/2 tablespoon honey
- 1 piece halibut (about 8 - 10 ounces, skin-on)
- 1/4 cup radish (thinly shaved)
- 2 tablespoons cilantro
- 2 tablespoons scallions (thinly sliced on the bias)
- 1 tablespoon olive oil
- 1/2 lime (juiced)
- cedar planks (soaked in salted water for a minimum of 2 hours)
- kosher salt and freshly ground black pepper (to taste)
Preparation
Step 1
Preheat oven to 400ºF. Line a baking sheet with foil and place the soaked wood plank in it.
In a bowl add the soy sauce, hot mustard, and honey and mix until smooth. Divide the galze in half and separate into 2 bowls.(reserving one bowl for glazing the fish after it's cooked). Season the halibut on both sides with salt and freshly ground black pepper and place on planks. Brush a good amount of soy glaze mixture on and bake for 30 minutes, until the fish is cooked through. Remove from the oven and brush with additional glaze.
In a mixing bowl, add the radish, cilantro and scallions. Season with Kosher salt and freshly ground black pepper. Add olive oil and lime juice and toss to combine. Serve halibut topped with radish salad.
Tips:
- Alternatively, cook the fish under the broiler or on the grill for 10 minutes. If using a gas grill, turn one side on hot and the other side on low. Place the fish on the plank on the cool side of the grill.
- If using cod fillets, cut the baking time down to 10 minutes and the grilling/ broiling time down to 5 minutes.
