Ingredients
- 1 c flour
- 1/3 c sifted powdered sugar
- 1/4 c plus 1 T chilled stick butter, cut into small pieces
- cooking spray
- 1 c sugar
- 2 T flour
- 1 1/2 tsp grated lemon rind
- 1/2 t baking powder
- 1/4 t salt
- 3 egg whites
- 1 egg
- 7 T fresh lemon juice
- 1/4 tsp butter flavoring
- 2 T powdered sugar
Preparation
Step 1
Combine flour and sugar in bowl; cut in margarine with pastry blender until resembles course meal. Press mixture into bottom of 11x7 baking dish coated with cooking spray. Bake 350 F for 20 minutes or until lightly browned.
Combine sugar thru egg in medium bowl; stir with whisk until blended. Stir in lemon juice and butter flavoring. Pour over crust. Bake at 350 F for 20 minutes or until set. Cool completely on a wire rack. Sift powdered sugar over squares.
