Ingredients
- Crust:
- 2 cups flour
- 1/2 cup sugar
- 1 cup butter
- filling:
- 2 large eggs
- 3/4 cup sugar
- 1/3 cup heavy whipping cream
- 2 tbsp flour
- 1/2 tsp baking powder
- 1/2 tsp coconut extract
- 1 cup sweetened flaked coconut
- Powdered sugar for garnish
Preparation
Step 1
1. Preheat oven to 350F. Line a 13x9" baking pan with foil, set aside.
2. To make crust, in small bowl, mix flour and sugar. Using a pastry blender, cut in butter until mixture is crumbly. Press crust into bottom of prepared pan. Bake for 20 mins or until lightly browned.
3. To make filling, in medium bowl, mix eggs, sugar, cream, flour, baking powder and coconut extract, whisking to mix well. Stir in coconut. Pour filling over hot, partially baked crust. Bake for 18-20 mins or until center is set. Let cool in pan completely. Cut into squares to serve. Sprinkle with powdered sugar.
